La Casa dei Ravioli: authentic Italian pastas

When I was 16 I went on one of the best trips of my life with my high school class: Italy. It was a food revelation. Italian pasta bore little resemblance to the pasta I grew up eating (no offense mom).

Montrealers are lucky enough to have a team of Italian artisans who have been making authentic Italian pasta for over 35 years. Theirs is pasta of exceptional quality that brings the rich flavors of Italy to Quebec. The team: La Maison du Ravioli. (Or Casa dei Ravioli for purists out there.)

A Montreal institution
Located at 2479 Charland in Montreal and founded in 1975 by Joseph and Benito, Casa dei Ravioli is a pasta factory steeped in tradition. Many of their pastas are still handmade and their specialties—ravioli, meat tortellini, ricotta and veal medaglioni, cappelletti, cannelloni, lasagna, gnocchi, tagliatelle—have made them famous. Luigi and his team supply over 300 Montreal restaurants with their pasta.

All of their pasta is prepared and sold the same day, so Luigi recommends eating the pasta right away or freezing it.

The secret?
Legend has it that the Casa dei Ravioli’s recipes are from a 90 year old cookbook brought from Italy by one of the Luigi’s uncle. Turns out the legends are true:
