Organic and artisanal Quebec cheese in your basket

Located in St-Félicien, in the Lac St-Jean region, Ferme des Chutes is a combination of seven small dairy farms that were gradually merged together over the years and include 300 hectares that feed the herd of some 180 Holstein cows (a hundred of which are dairy cows).

Certified organic since 1983 (rather avant-garde!), the Gérard family and their neighbor Rodrique have led the show, launching their artisinal cheese farm in 1993 to transform the milk from their herd into new products for local residents.

How is artisinal cheese made?

The milk is pasteurized at low temperatures to preserve its nutritional value and taste.

Old-fashioned cheese-making

  • Pasteurization
  • Spray sanitation
  • Inoculation
  • Renneting
  • Decurdling
  • Baking
  • Withdrawal
  • Blocking
  • Mill passage
  • Salting
  • Molding
  • Bagging (for cheese curds)

The cheese ripening period can last anywhere from 3 months to 6 years (!), depending on the type of cheese.

Did you know?

  • The pale yellow color of cheese is due to the presence of an antioxidant.
  • The creamy texture (not brittle) reflects the high fat and omega-3 content.
  • The taste is influenced by the ripening period and the fodder and wild plants eaten by the cows.
