Yvon Lacoste, your local fresh herb grower

It’s a cold and sunny Sunday afternoon. Yvon welcomes us only 30 minutes after we left Montreal, in the entrance of his St-Clotilde house on the south shore. He was born on this land and has been growing fresh herbs and cucumbers (all pesticide-free) for several decades.

The Lacoste story
In 1983, Yvon became the owner of the farm where his father had been growing a wide range of flowers in a year-round greenhouse production for over 40 years. Today and for the last 31 years, Yvon and his wife, along with a team of eight, work day and night (literally) to grow Quebec’s most delicious and diverse fresh herbs.

That’s the number of herb varieties grown by Yvon. He is as passionate about herbs as we are about rooftop farming. He grows some of your favorite herbs—the ones you could name off the top of your head—but it doesn’t stop there.
 
As we walk through the aisles of his main greenhouse, he picks up the pots, gently brushes his hand through the leaves, and brings the plants right up to our noses so that we can take in the aromas: pineapple sage, komatsuna, tall curry, over a dozen varieties of basil, and so much more… It’s still cold outside, and it’s quite the miracle to encounter such biodiversity.

Herbs at home
Yvon’s herbs are grown in pots so that you can get the maximum freshness and keep them a few days—or maybe even a few weeks (if you can put them by a window that’s ideal). By adding a different fresh herb every week to your order you will discover new aromas, upgrade your meals, and add a touch of green to your kitchen window. Personally, I enjoy the daily mini-harvest that my herbier provides; it’s like a taste of summer.
 
Conservation tip: fresh herbs in cubes
If you don’t have a green thumb like Yvon or if you simply want to prolong the life of your fresh herbs, get your ice cube containers out, a good olive oil (like Favuzzi’s), and pick the leaves from the plants. Whether you only have one or you’re mixing many, rinse them, slice them, and put them in ice cube containers before you cover them with oil. Place in the freezer and enjoy in your future sauces, omelets, or dressings.
