- Marie des neiges Magnan

  • 1 tbsp of smoked paprika
  • 1 tbsp of organic natural sesame seeds from Yupik
  • 2 tbsp of olive oil
  • Salt & pepper
  • 1 large flank steak from Boucherie Nordest

Sweet potato fries

  • 3 to 4 sweet potatoes from Printemps Vivace
  • 2 tbsp of olive oil
  • 1 tsp of smoked paprika
  • Salt & pepper

  • 1 cup of chopped parsley from Domaine de la Cressonnière
  • ½ cup of chopped coriander
  • 2 tbsp of Lufa Farms radish microgreens
  • 1 or 2 chopped garlic cloves from Terroir Pinacle
  • 3 tbsp of red wine vinegar from Olive Pressée
  • ⅓ cup of olive oil
  • 1 tbsp of maple syrup from Ferme St-Ours
  • Salt & pepper

  • In a small bowl, mix the paprika, the sesame seeds, the olive oil, and the salt and pepper. Coat the flank steak with this marinade and let stand at room temperature for 30 minutes.
  • Preheat the oven at 425 °F.
  • Peel the sweet potatoes and slice them into thin, equally-sized strips
  • Mix the olive oil, the paprika and the salt and pepper, and coat the sweet potato strips with this mixture. Lay them out on a baking sheet lined with parchment paper. Make sure there is room between the strips, use two baking sheets if needed. Oven bake for 30 minutes, turning the strips over after 15 minutes. Baking time will vary according to the thickness of your strips.
  • Meanwhile, prepare the chimichurri by mixing all the ingredients in a bowl, and setting aside.
  • When the fries are ready, pour 1 tbsp of olive oil in a pan on medium-high heat, and sear the flank steak 3 to 4 minutes on each side. When the steak is cooked just the way you like it, let it stand on a cutting board for 5 minutes before slicing.
  • Pour some chimichurri on your steak slices, and serve with the sweet potato fries and a nice salad. Don’t forget the candles!
