Deeply rooted in the historic farmlands of Quebec’s Eastern Townships, Fromagerie Missiska is known for its cheesemaking expertise and deep care for the land. In the small town of Bedford, their herd of Jersey cows produces A2 milk, which their team transforms into one-of-a-kind cheeses.

Born and raised on a cattle farm, Caroline Pelletier’s love for animals took root early. Eager to further her knowledge, she earned a degree in agronomy at Université Laval and even studied the science of cheese-making in Poligny, France. As Missiska’s founder and head cheesemaker, she leads her business with passion, care, and decades of experience breeding Jersey cows. What began humbly with just a few animals raised alongside her father’s, has grown into one of the most respected Jersey herds in Canada.

Cows raised with care and respect. Just down the road from Caroline’s childhood farm, Missiska’s herd grazes freely, taking in the fresh air of the Brome-Missisquoi region until they begin producing milk. Inside the barn, the animals have ample space to roam and socialize, with access to natural light, good ventilation, and food that’s grown right on the farm.

Small cows, big positive impact. More compact than other breeds, Jersey cattle require fewer resources, making them a more sustainable and affordable choice for farmers. They use about 32% less water and 11% less land, in addition to producing fewer methane emissions.

Exceptional milk that makes for exceptional cheeses. Jersey cows produce milk rich in A2 beta-casein, a protein that many find easier to digest than standard A1 milk. To explore their full potential, Missiska opened a fromagerie in 2018 where they produce an iconic lineup of products that perfectly complement the offerings of neighbouring vineyards, cideries, and orchards. Their selection includes their Caprice d'Emily, a mild brie, and their gruyère-style Secret d’Emma, both named after Caroline's daughters and a sweet reminder that Missiska remains first and foremost a family affair. 

Stepping up our sustainability with returnable bottles. Building on the success of our returnable juice bottles and refillable home and body care products, we’ve added Jersey milk to the roster. Missiska is our first partner to join us in this returnable bottle program, marking another step forward in our efforts to reduce waste. Each week, empty bottles are sent back to the farm where they’re washed, sterilized, and refilled before returning to us. Once you’ve finished your milk at home, simply rinse the bottle and place it (without the cap) in your basket for pick up…and then the cycle starts again.
