Baked Asparagus Omelette

Ingredients

  • 1 bunch asparagus
  • Cooking butter (or any vegetable oil will do)
  • 1 bunch chives
  • 4 eggs
  • 1 large tomato
  • 1 golden onion
  • salt and pepper to taste

Preparation

  • Finely chop onion and garlic. Set aside.
  • Dice tomatoes and other veggies. Set aside.
  • Wash and break the tips of the asparagus off. Set aside.
  • In a medium sized bowl, mix eggs, add a pinch of salt and freshly ground pepper. Set aside.
  • Finely chop chives. Set aside.
  • Preheat the oven to 375F.

Cooking

  • Heat up a medium sized oven safe frying pan, add cooking butter and throw onions and garlic in there.
  • At the same time, in a bottom half of a steamer pan set, bring water to boil. Place asparagus in the top half of the steamer pan set and steam for 5 - 10 minutes (or until bright green.) Remove asparagus and set aside.
  • Fry onions and garlic until golden brown. Add the rest of diced veggies. Add eggs and cook for 2-5 minutes (or until the bottom of your omelette is done.)
  • Turn off the heat. Place steamed asparagus on top of your omelette and place the omelette in the oven.
  • Bake for a few minutes until ready.
