Baked Asparagus Omelette

Ingredients
- 1 bunch asparagus
- Cooking butter (or any vegetable oil will do)
- 1 bunch chives
- 4 eggs
- 1 large tomato
- 1 golden onion
- salt and pepper to taste

Preparation
- Finely chop onion and garlic. Set aside.
- Dice tomatoes and other veggies. Set aside.
- Wash and break the tips of the asparagus off. Set aside.
- In a medium sized bowl, mix eggs, add a pinch of salt and freshly ground pepper. Set aside.
- Finely chop chives. Set aside.
- Preheat the oven to 375F.
Cooking
- Heat up a medium sized oven safe frying pan, add cooking butter and throw onions and garlic in there.
- At the same time, in a bottom half of a steamer pan set, bring water to boil. Place asparagus in the top half of the steamer pan set and steam for 5 - 10 minutes (or until bright green.) Remove asparagus and set aside.
- Fry onions and garlic until golden brown. Add the rest of diced veggies. Add eggs and cook for 2-5 minutes (or until the bottom of your omelette is done.)
- Turn off the heat. Place steamed asparagus on top of your omelette and place the omelette in the oven.
- Bake for a few minutes until ready.
