Lufa Farms' Cucumber Basil Mojito

A relic from Lufa Farms' recent past, the Cucumber Basil Mojito. This recipe was invented for the 25th Anniversary event at Cirque du Soleil in summer 2011, where we were invited to set up a kiosk and serve up some fresh salad and drinks. Using our own Lebanese cucumbers and Genovese basil, as well as organic maple syrup from our partner Ferme St-Ours, this drink is amazing, especially for the sweltering early summer weather we're having.  It ended up being the hit of the afternoon at Cirque, with a line of thirsty party-goers wrapping around the whole park.  (We may have also contributed to some of the wildness of this party with a steady flow of mojitos through the afternoon and evening.)  A really inspiring event, among some of the most creative and incredible individuals out there...
 

1-2 lengthwise slices of Lebanese cucumber (or 4-5 regular round slices) *
1 basil leaf *
1/2 tsp maple syrup *
 

1 tsp lime juice
1 oz white rum
Club soda
Ice

Instructions

Muddle cucumber slices, basil, and syrup in the bottom of a glass.
Fill glass with ice, and add rum and lime juice. 
?Top up with club soda and stir well to mix.  

Note: All ingredients except for club soda can be put into a cocktail shaker to mix, then poured into a glass and topped up with club soda.  Be sure to muddle cucumber, basil, and syrup first, then add rum, lime juice, and ice. Mix and serve.
