Endive, apple and maple walnut salad

I'm not a big fan of bitterness. However, I like to use endives in my salads and create a balance of taste with other ingredients. In this case, I use apple and maple syrup to give it a sweet twist. The result is awesome.

This is a salad that easily accompanies meat or fish. For those who want to eat it for lunch, add 1/4 cup of green Le Puy lentils to have a full meal.

Ingredients

  • 1 cup walnuts
  • 1 tablespoon maple syrup
  • 2 endives, cut into matchsticks
  • 1 red apple, cut into matchsticks
  • 2 green onions, thinly sliced
  • 1 tablespoon chopped parsley
  • 1/4 cup crumbled goat cheese
  • Sea salt & pepper
  • (1/4 cup green lentils)

Dressing
1 tablespoon mayonnaise
1/4 tablespoon mirin sauce
1/2 teaspoon of maple syrup
juice of 1/4 lemon

Directions

  1. Preheat oven to 350F.
  2. On a baking sheet lined with parchment paper, spread the walnuts and coat them with a tablespoon of maple syrup. Place in the oven for 5 minutes. Stir them to make sure they are well coated and put them another 5 minutes.
  3. In a large bowl, mix all the ingredients for the dressing. Once the mixture is homogeneous, add all salad ingredients and mix well.
