Our mission to build a better food system includes sending you the freshest possible products - often prepped the very morning of your delivery. Our dedicated team and partners put in incredible work to make sure that your favourite dishes, cuts, bread, coffee, and more are made and sent to you all before most of us have even started our day.
We recently visited La Fabrique Arhoma (one of our neighbourhood bakeries) and Les Filles Fattoush (the experts in prepared Syrian meals), two of our incredible partners who play a vital role in making the Marketplace as fresh as it gets. Keep reading and watch as we delve into the behind-the-scenes, morning-made magic performed by our dedicated food makers and warehouse team members.

At midnight before your delivery, your Marketplace closes and our partners receive the final count of their orders. Throughout the day, these foodmakers check what's already in Lufavores’ baskets and use their order-predicting superpowers (and previous weeks' info) to start prepping. When the clock strikes midnight, they work their magic.

Arhoma's team begins kneading the dough a day in advance to give it time to rise. They work through the night to meet the exact order and if ever they’re short on a product, they hustle to make more. If there’s any accidental surplus, they put it to good use in their bakery (as bread crumbs, donations, etc.).

At Filles Fattoush, they start bright and early at 5 am on the day of your delivery. Their morning team checks the final order count and dives into prep. With a commitment to local, sustainable sourcing and a strong aversion to waste, they have order limits in place to make sure they can always make enough.

All daily-made food arrives at our headquarters shortly after sunrise. Our reception team checks the trucks and product temperatures, sending them to the distribution centre. They have less than an hour to inspect and arrange hundreds of products before our packing team starts assembling baskets.

Following the instructions on the app we developed in-house, our team members start packing. To prevent any damage from heavier items, delicate goods like bread are added last. Once assembled, the baskets are placed onto our conveyor and sent down to the loading dock, where the delivery team member retrieves them and loads them into the truck.
The bottom line is a better product. This method is a heck of a lot more work but you receive longer-lasting high-quality items, and we’re able to keep waste to a minimum with nothing left over at the end of the day.
