St-Viateur bagels in your basket

Yahoooo! I can hear your cries of joy from here! Isn't this the perfect way to celebrate local Montreal food in the new year? Starting next week, you'll find three varieties of bagels from this Montreal food institution on the Marketplace: plain, sesame, and poppy seed.

Unbelievable bagels since 1957

Brothers Nick, Robert, and Vincenzo are the co-owners of this St-Viateur Bagels, where their father started working in 1962 - five years after it's opening.. After fifty years and an ever-expanding wall of celebrities, little has changed in the Mile-End artisanal bakery: the bagels are still made the same way and people flock from near and far to get the best bagels in town, whether to grab one or two as a late-night snack or a couple dozen for a big Sunday brunch. 24 hours a day. 7 days a week.

Montrealers (and tourists) just keep coming. Why? The bagels are just that good—and always fresh.

The art of bagels
Mohamed, Fadi (our photographer!), and myself had the chance to visit the bakery this week to understand how these little wonders are concocted. (Not gonna lie, most of the reason we went was to eat bagels fresh from the oven).

The dough
The slab of dough weighs over 100 pounds. It's cut into thin straps from which the bagels are shaped.

The shape
The twist that makes a perfectly-shaped bagel is quite unique and only acquired with lots of practice. Nick and his team can roll one every 2 seconds!

The kettle
Once formed, the uncooked bagel is placed in a kettle for a few minutes. It contains a special ingredient: honey.

Seeds
Depending on the type of bagel, they add the sesame seeds, poppy seeds, etc. What's your favorite? (Nick's is the poppy seed.)

The wood oven
This is what gives the bagel its soft texture. Bagels are baked for 20 minutes on a wooden board.

St-Viateur & Lufa Farms: Montreal stories

At our last open house in November, Nick and his family were among the hundreds of people to visit the rooftop farm. They had a real crush on the concept and after a brief discussion with our team it was obvious: we wanted to offer St-Viateur bagels on our Marketplace.
