That's the motto of the Le Fromentier team. Le Fromentier was founded in 1993 by Benoît Fradette, whose original vision is still thriving 20 years later in the breads, pastries, quiches, and tarts that are prepared daily on Rue Laurier in Montreal.

20 years ago, when he founded Le Fromentier, Fradette was inspired by the grains that went into the bread-making process. He worked extremely hard, and with the best ingredients at his dispoal, so that the end result carried the memorable taste of the grains that were used in each kind of loaf. Bread is extremely beneficial for the body, since grains have nutritive qualities good for digestion, the liver, kidneys AND the spirit. Taste, taste buds, pleasure.

While you're sleeping, Le Fromentier bakes...
Did you know that? The bakers at Le Fromentier work through the night. Just as you're ending your day and slipping under the covers, head baker and co-owner Benoît Paradis and his two accomplices Robert and Mario arrive at the kitchen and get to work.

The pastry chef, Stéphane (who concocts your Marie-Anges, empereurs, croissants, chocolatines, and other delicious puff pastries) and Richard, who's responsable for quiches and tarts, work during the day.

Rounding by hand
At Le Fromentier, the breads are cut and shaped by hand, a practice central to the artisical method that combines exceptional ingredients and a hearth funace (bread are baked directly on the stone!) to make truly artisanal treasures. This method, and the craft and care that goes into it, is becoming rarer and rarer.

Tip your hat!
Tip your hat to the nightbirds, artists, artisanal bakers – Benoît, Robert, and Mario – who work each night to bake your breads. Think of them the next time you bite into a delicious slice of freshly-baked bread.

After completing her degree in finance, Lucie has continued to help out the Le Fromentier team by working Saturdays as she did when she was a student.
