Simple Lufa Farms salad

Serves 3 to 4 side dish or appetizer salads
Here’s a super simple crunchy summer salad that’s loaded with taste and greens from our Anjou greenhouse (and a smidgen of Ahuntsic too). As it’s ready in five minutes, this salad may just become your greatest ally on days where you’re running around like a headless chicken and don’t feel like eating junk on the go! Serve it as an appetizer or to accompany whatever’s on the BBQ.

Ingredients
- 2 small leafy fennel bulbs (+ a few leaves) from Lufa Farms Anjou
- 4 stalks small leafy celery (+ a few leaves) from Lufa Farms Anjou
- 1 bag Persian cress or watercress from Lufa Farms Anjou
- a few purslane stems from Lufa Farms Anjou
- 2 Lebanese cucumbers from Lufa Farms Ahuntsic
- 1 handful Genovese or Greek basil from Lufa Farms Anjou
- 1 tray sorrel, pea shoot, or sunflower microgreens from Lufa Farms Ahuntsic
- 1 Persian lime (juice) from Seasons Farm Fresh
- 2 tbsp. organic extra virgin Tunisian olive oil from Olive Pressée
- Salt & pepper
- 1 bag shaved parmesan from Riviera
Instructions
- Slice fennel, celery, and cucumber. Make sure to chop and keep some fennel and celery leaves (quantity is up to you, according to taste).
- Pluck the leaves off the cress and basil (don’t throw the stems away, they can be used in soups).
- Keep the purslane as is for decoration (just cut the stems in half if they’re too long).
- Mix all veggies and leaves together (except purslane), add lime juice, olive oil, salt and pepper to taste.
- Decorate with purslane and parmesan flakes. Serve right away.
