Basil & garlic scape pesto
Basil is the king of herbs (although cilantro and chives are not too far behind if you ask me). Why not take advantage of summer to prepare pesto (and maybe freeze some for winter)?
I decided to add garlic scapes to my recipe because the make a delicious pesto...and I still have quite a lot in the fridge!
3 garlic scapes
1 large bunch of fresh basil
1 cup of olive oil
½ cup of grated Parmesan cheese
¼ cup of pine nuts, walnuts, pistachios or almonds
Instructions
Mix the ingredients in a blender until relatively smooth.
Some ideas for using pesto...
- Spread it on sandwiches
- Heat it up in the pan before cooking an omelet
- Mix it with pasta (hot or cold salad)
- Give it as a gift to your mother, brother or neighbor :)
- Freeze it in an ice cube tray for later use
