Berry fruitcake

For a summer finale, try making a simple ricotta fruitcake. All you need is a little time and lots of local berries from the Marketplace.
Ingredients
Dry Ingredients:
- 2 cups pastry flour
- 1½ cups organic sugar
- 2 tsp baking powder
- 2 pinches of salt
Other Ingredients:
- 2 eggs
- 1 pack ricotta (250g)
- 1 cup whole milk 3.8%
- 1½ tsp vanilla
To Bring:
- 1 tbsp butter (for the stewpot)
- 2 tbsp sugar (for the stewpot)
- ¾ cup frozen blueberries
- 1 quart strawberries
- 2 stalks of rhubarb, chopped
Equipment:
- Firewood
- Campfire grill
- Stewpot (e.g. “Creuset”)
- Meat tongs or strong branch
- Aluminum foil
- Plates
- 2 mixing bowls
- 1 spatula
Instructions
Preparation
- Mix all dry ingredients in a Mason jar, and all wet ingredients in a separate Mason jar.
- Start by building a campfire, and keep enough wood to feed the fire for at least 1 hour.
- Place your grill above indirect heat, close enough to keep it warm.
- Prepare your ingredients while the fire heats up.
- In a large bowl, pour the wet mixture, then slowly incorporate the dry ingredients.
- Butter the stewpot and sprinkle with sugar.
- Pour the cake mixture in the stewpot, add the berries and fruits on top.
- Cover the pot and wrap it in aluminum foil.
- Place the stewpot on the grill and make sure you have enough embers to keep it warm.
- Let cook for at least an hour before you open the pot. If the cake is not cooked enough, leave for another 10 minutes.
- Remove from heat, and enjoy!
