Buckwheat crepes

La Seigneurie des Aulnaies' original buckwheat crepe recipe for those weekend brunches. 

 

Ingredients

  • 1 ½ cup (375ml) buckwheat flour
  • 1 cup (250ml) milk
  • 1 cup (250ml) water
  • ½ tsp (2ml) salt
  • 1 tsp (2ml) baking soda
  • 1 egg

Instructions

  • In one bowl mix the buckwheat flour & baking soda.
  • In another bowl mix the milk, egg & salt.
  • Slowly, add the liquid to the dry mix to avoid over mixing. Add some extra water if needed.
  • Pour a small portion of your mix in an oiled pan at high heat. Flip the pancake when the edges are well cooked.
  • To keep warm, divide the pancakes between two plates and place them in the oven at 150 deg C. This will keep them warm without drying out.
