La Seigneurie des Aulnaies' original buckwheat crepe recipe for those weekend brunches.
Ingredients
- 1 ½ cup (375ml) buckwheat flour
- 1 cup (250ml) milk
- 1 cup (250ml) water
- ½ tsp (2ml) salt
- 1 tsp (2ml) baking soda
- 1 egg
Instructions

- In one bowl mix the buckwheat flour & baking soda.
- In another bowl mix the milk, egg & salt.
- Slowly, add the liquid to the dry mix to avoid over mixing. Add some extra water if needed.
- Pour a small portion of your mix in an oiled pan at high heat. Flip the pancake when the edges are well cooked.
- To keep warm, divide the pancakes between two plates and place them in the oven at 150 deg C. This will keep them warm without drying out.
