Bulgur salad in a Mason jar

For a simple and filling lunchtime, try a mason jar salad recipe featuring bulgur and veggies.

Ingredients

For the dressing:
- 6 tbsp plain yogurt
- 1 handful fresh cilantro, chopped
- 1 handful fresh basil, chopped
- Juice of 1 lime
- Pinch of salt
For the salad:
- ½ cup fine-ground bulgur (or couscous)
- 2 Lebanese cucumbers
- 1 pack of sorrel
- ½ quart field strawberries
- ¼ cup organic almonds
- 3 tbsp chopped samphire (optional)
Equipment:
- Mason jars
- Knife
- Cutting board

- Prepare and combine all ingredients for the dressing and keep in a sealed container to take with you.In a saucepan, bring ½ cup of salty water to a boil and add the bulgur. Turn off the heat, cover, and let the bulgur absorb the water. Season to taste with salt and pepper and let cool off. Place ½ cup of bulgur in each Mason jar.
- On the day you plan to eat the salad, cut the cucumbers, sorrel, strawberries and samphire.
- Layer each ingredient in the Mason jar: strawberries, cucumbers, sorrel, almonds and samphire, then pour the dressing. Leave some space at the top to be able to shake well before serving.
- Close the jars, pack your bags and off you go - a great meal is awaiting you. Bon appétit!
