Mango salsa for Cinqo de Mayo!

On the menu for today: colourful and festive Mexican flavours to celebrate Cinco de Mayo! The dried mangoes taste like sunshine and give a delicious sweetness to the salsa. Perfect as an appetizer or to take on a picnic!
- 1 ½ cup of PRANA dried mangoes
- 1 large tomato
- 1 Lebanese cucumber

1 ripe avocado
- 1 shallot
- 3 small limes
- A handful of fresh cilantro
- 1 jalapeño pepper

Instructions
- Cut the dried mangoes into small pieces using kitchen scissors.
- Squeeze the lime juice into a bowl and marinate the mangoes in it for 15 minutes.
- Cut the tomato, avocado, and cucumber into small cubes.
- Finely chop the shallot, cilantro, and jalapeño.
- Combine all ingredients in a bowl, and add salt and pepper to taste.
- Refrigerate for a minimum of 45 min prior to serving.
