Mango salsa for Cinqo de Mayo!

On the menu for today: colourful and festive Mexican flavours to celebrate Cinco de Mayo! The dried mangoes taste like sunshine and give a delicious sweetness to the salsa. Perfect as an appetizer or to take on a picnic!

  • 1 shallot
  • 3 small limes
  • A handful of fresh cilantro
  • 1 jalapeño pepper
  • Salt and pepper
     

Instructions

  1. Cut the dried mangoes into small pieces using kitchen scissors.
  2. Squeeze the lime juice into a bowl and marinate the mangoes in it for 15 minutes.
  3. Cut the tomato, avocado, and cucumber into small cubes.
  4. Finely chop the shallot, cilantro, and jalapeño.
  5. Combine all ingredients in a bowl, and add salt and pepper to taste.
  6. Refrigerate for a minimum of 45 min prior to serving.
