Mulling spices for wine, rum grog, and Xmas punch

Our partner la Fine Fleur de la Tapani has made one of our (ok...my) dreams come true by preparing a spice kit for the most comforting and festive drink of the holiday season: mulled wine. I was lucky enough to study in Switzerland for several years, where mulled wine is served as soon as it gets cold out and then at all outdoor activities winter-long. Good times!

Mulled Red Wine

Ingredients: 

  • 1 L red wine (Côte du Rhone)
  • 125g sugar or honey
  • 1 orange
  • 10g mulling spices La Tapani
  • 2 cinnamon sticks
  • 2 bay leaves

Preparation:

  • Pour the wine in a pan, heat without boiling for 10 minutes with star anise.
  • Add sugar and spices.
  • Simmer for 20 minutes more.

  • Serve nice’n’hot with a slice of orange & sugar to taste!

Mulled White Wine

Ingredients: 

  • 1 L Reisling or other similar wine
  • 150g sugar
  • 1 star anise
  • 1/3 sliced lemon
  • 10g mulling spices La Tapani
  • 2 cinnamon sticks
  • 2 bay leaves

Preparation:

  • Peel and slice lemon
  • Pour wine in a pan
  • Add spices, cinnamon and bay leaves
  • Simmer for 10 minutes (no boiling)
  • Add sugar and stir

  • Serve nice’n’hot with lemon slice & sugar to taste!

Rum Grog

Ingredients: (makes 4 portions)

  • 8 oz dark rum
  • 2 oz fresh lime juice
  • 16 oz water
  • 4 tsps cane or brown sugar
  • 10g mulling spices La Tapani
  • 4 orange slices
  • 4 cinnamon sticks

Preparation:

  • In 4 mugs, divide the rum and the cinnamon sticks (set aside)
  • Pour water in a pan and bring to boiling point .
  • Add the rest of the spices.
  • Let simmer for 10 minutes or so.
  • Pour into mugs with the rum and cinnamon sticks.
  • Garnish mugs with the orange slice and serve.

Xmas Punch

Ingredients (makes 12 portions)

  • 1 liter dark rum
  • 2 L red wine
  • ½ liter porto
  • 1.5 L elderberry juice or (blueberry, grape, cranberry)
  • 400g orange
  • 40g apple
  • 6 cinnamon sticks
  • 30g mulling spices La Tapani
  • 140g honey
  • 1 vanilla bean

Preparation:

  • Dice oranges and apples and let sit in rum a few hours.
  • In a pan simmer wine, juice, spices, cinnamon sticks and simmer 10 minutes.
  • Pass through a sieve, add fruits, spices and porto. Simmer for another 15 minutes.
  • Serve hot with orange slice and cinnamon stick.
