Pumpkin pie

An awesome October recipe to try out.
Ingredients
Crust:
- 2 cups all-purpose flour
- 1/2 tsp. salt
- 1/2 cup sunflower oil
- 1/4 cup 3.25% milk
Pumpkin Filling:
- 2 cups pumpkin purée (1 medium sized pumpkin cooked)
- 3 large eggs
- 1/2 cup 35% cream
- 1/2 cup sugar
- 1/2 tsp. salt
- 1 tsp. pumpkin pie spice mix (cinnamon, ginger, cloves and cardamom)
Instructions
- Combine and mix well all of the ingredients for pie crust. The dough will be wet but not brittle.
- Press the dough down into a pie pan until it evenly covers all sides.
- Bake for 10 - 15 minutes at 350 F and remove the pie crust from the oven.
- Mix all pumpkin filling ingredients together until smooth.
- Pour filling over crust and continue baking at 350 F until filling is set, but still slightly loose in the center (about 40-45 minutes).
