Greenhouse Plant Pull & Tzatziki in the park

Johnny here again! Last week here at Lufa Farms we had a small crop change where we replaced 5 rows of English and Lebanese cucumbers. The cucumbers were the crop that I tended to, so it was sad to see them go. Each cucumber crop lasts approximately four months and can produce lots of cucumbers! With the cucumbers in mind, I decided to take the best looking English cucumber we had and make some tzatziki to eat in the park!

Here's how I made it:

  • 1 English cucumber
  • 1 Lemon
  • Dill
  • 1 Vidalia Onion
  • 500 ml of plain Greek yogurt 
  • 2 cloves of garlic
  1. Take a delicious Lufa Farms cucumber (or one of our partner farms’) and take the skin off, cut it in half and scoop out the seeds with a spoon.  Chop it into small chunks and let it drain for a half hour (or just put the chunks into a couple paper towels and lightly squeeze it). 
  2. Next, wash the lemon and roll it around a bit to get the juices going, cut it in half and squeeze the juice into your bowl.
  3. Finely chop up your garlic, onion and about a handful of dill. Combine these with the yogurt and cucumber.
  4. Stir it up (like the Bob Marley song) and let it sit in the fridge for an hour. Serve with skewers, pitas, beef, lamb, vegan meat, carrot sticks or whatever you prefer. It's DEEELICIOUS!
