Inchirah's Famous Gaspacho

This gaspacho was prepared by Mohamed's mom for our most recent open-house. Inchirah is such a great cook and she loves fresh produce... not so surprising that his son came up with the idea of building a rooftop farms in the middle of cities.

3 pounds tomatoes, cored and coarsely chopped
1 seedless cucumber, peeled and coarsely chopped
2 red bell peppers, coarsely chopped

 

1 jalapeño, seeded and coarsely chopped
1/4 cup sherry vinegar
1/3 cup extra-virgin olive oil
Salt and freshly ground pepper

Instructions

Just chop everything in big chunks then threw it in the blender, pretty easy. You can add onions and garlic too, but it's not needed. You can can also use different types of vinegar - Inchirah used red wine vinegar.
